Another great choice for vegetarians. Healthy, reach of proteins. Takes time to soak the bean but once done overnight you have a quick meal ready on your table. Delicious.

Ingredients:
- 250 g dried white beans
- 1 large onion - chopped
- 2-3 celery rib - chopped
- 1 carrot - chopped
- 2 small red hot peppers
- 5 cloves of garlic - finely chopped
- 1 red pepper, deseeded and chopped
- 4 medium potatoes - cut into small cubes
- 7-10 pimentos
- 5 Tbsp extra-virgin olive oil
- 600 ml vegetable stock
- sea salt and freshly ground black pepper
Method:
1. Soak the dried white beans in cold water for minimum 8 hours. Best and also time efficient is simply to leave it soaking overnight.
2. Drain and put in a large pot. Pour boiling water into the pot. it should just slightly cover the beans.
3. Keep cooking for apprpx. 30 minutes on medium-low heat. Beans should soften by that time.
4. Drain and set aside for a while.
5. In the meantime we will prepare the vegetables. Put the olive oil in a large sauce pan and set on medium-high heat. Add chopped onion and fry for 3 minutes. Do not forget to stir from time to time.
6. Add garlic, pimentos and red hot peppers into the onion and fry for another 3 minutes.
7. Move garlic, red hot pepper and onion into a large pot. Add carrot, celery, potatoes and red pepper. Cook and stir for another 3 minutes.
8. Add the vegetable stock. Bring to boil but then reduce the heat. Partially cover the pan with the lid and let simmer for another 20 minutes until all vegetables become soft and tender. Add the beans and cook for another 20 minutes. Do not forget to stir all the time to avoid beans burning to the bottom.
9. Season with pepper and sea salt. Serve hot with a slice of crusty bread.
