Excellent as a hot starter. Takes only 20 minutes to prepare. This is just cheese with some spices so perfect for Vegetarians. 'Oscypek' is a smoked eve's milk cheese which is made in the Tatra Mountains in Poland. You can easily replace it with smoked Mozzarella cheese which is simply excellent.

Ingredients:
- 400 g smoked eve's milk cheese or smoked mozzarella
- 6-8 big garlic cloves - finely diced
- 1 Tbsp freshly ground white, red and black pepper - do not use salt - not needed
- 5-6 Tbsp extra-virgin olive oil
- fresh thyme finely chopped
Method:
1. Mix finely diced garlic cloves with olive oil, pepper and finely chopped thyme.
2. Cut cheese into big thick slices. Each put on a piece of aluminium foil and fold the corners creating little foil boxes.
3. Pour olive oil with garlic and spices on the cheese and leave for 10 minutes.
4. In the meantime pre-heat the oven to 200 C. Once ready bake the cheese for 10 minutes on the grill. Do not overdo - cheese must be tender but not dry. If you bake it too long cheese becomes dry.
5. Serve warm and with baguette roll.
